Does anyone here use gigabit ethernet for their LAN? What kind of throughput do you get for machine-to-machine file transfers? What is the CPU usage like? Do your NICs have TOEs? Any NIC suggestions?

I love my Gigabit. I can supply 3 other computers with 10/100 Nic's and my Gigabit switch, at full speed. It makes 3-D rendering much easier with distrubted computing.

So you're seeing, what, 40MB/s+? Are you guys using 'jumbo' frames? I was curious how those would interact with the rest of the university network.

I'm still seeing base 10 speeds when I use the university network. I personally have my own switch set-up in my room that is able to attain those speeds.
