You'll need to mod your PS2 (in addition to getting the HDD/Network adapter) to utilize a non-Playstation HDD. Should you mod your PS2, it's simply choosing a HDD from the supported list and less than 137Gig (hardware size limit) and play away.

Modding a PS2 is much more difficult than modding an Xbox. You'll need to find someone with the required tools, expertise, and files to pull it off. I've never done it; I'd like to try. I make no warranties, expressed, or implied, that I won't just kill your console and leave you with $200 worth of junk.
In any case you'll need to find those necessary files on you own.

errrr...I'm pretty sure everyone is leading you in the wrong direction. For putting games on a PS2 hd, all you need is HDAdvance or HDloader. HDadvance is basically HDloader with a nicer gui and stolen code. I've been out of the PS2 loop for a while, but as of 8 months ago, there was no way to save to the hdd. You still need the memory card for that. HDadvance or HDloader should be available at the usual places.

The PS2 (un-modded) will reject all non-PS2 HDD's. Sony has a utility to put (at least some) games on a PS2 HDD. You'll need to find a work-around to get a HDD istalled, those mentioned utilites will work.

I haven't looked into it too much, but from what I've read, the simplest way to play PS2 games from the HDD would be to chip the PS2 and of course install a HDD using the add-on adapter.
But...from there...I was pretty sure that with the right software...which I believe is free you should be able to run games from the HDD.
In response to the original question, I have a PS2 that I spent $20 on that I wouldn't mind attempting to mod.
