With advising coming up, who should I avoid and/or try to sign up with as far as Professors and GTA's in the IST department?

depends on the courses you're taking...though most courses are really easy in IST.

You don't really have the option to avoid anyone, most of the courses only have one instructor.

But yeah, list the classes you need to take so people can better respond.

How about for these courses, who should I beware of (even though I might be forced to take them) and whom should I be excited about?

IST 51
IST 141
IST 151
IST 336

I'd go and talk to William Kehr. He's the advisor for the IST department. Really nice guy. Tell him Chris Howard sent ya. Anyway Since our department is still pretty new, most classes only have one teacher. Most of those classes your taking are easy programming classes, not sure what 336 is. All the teachers I had are gone now, so I can't really give specific advice. Sorry :/

336 is Internet Computing I think
